Butter Cake - 4 Ingredient Bakes

A slice of butter cake.

This is the first cake that I learned to bake and after baking many cakes, this cake still remained as my favourite. The cake contained only four core ingredients: butter, sugar, eggs and flour. No baking powder or baking soda is required.

The cake rise beautifully from the air incorporated into the batter during the creaming of butter and sugar. Therefore it is important to cream the butter and sugar until light and fluffy. Additionally, sifted icing sugar and flour helps in making a fine textured cake as well. Optional ingredients such as fresh milk (for extra moisture), vanilla essence (for a touch of vanilla), zest of lemon (for a hint of lemon) or Dutch processed cocoa ( to make a marbled butter cake) can be added, but not necessary.


Recipe for Simple Butter Cake
Ingredients
250 grams butter
200 grams icing/confectioners sugar, preferably sifted
5 eggs
300 grams All-Purpose flour (sifted 3 times)

Baking Temperature: 225C/440F
Baking Time: 30-45 minutes

Directions
  1. Preheat the oven.
  2. Cream butter and sugar until light and fluffy.
  3. Fold in eggs and mix evenly.
  4. Add in flour little by little. Make sure it is incorporated thoroughly.
  5. Pour into baking tin and bake at 225C until cooked through.

  10. I love how your cake looks and can't imagine there isn't any rising agents in it! I was wondering, do you fold in the eggs with a spatula or using the mixer to do the job?

  11. I just set the mixer to the slowest speed and slowly pour the beaten eggs in. I added the flour in using the same speed with the help of a spatula. Didn't detach the bowl from the mixer until the whole batter is done. :)
